Hearty Chicken, Veggie & Tortellini Soup


This has become a family favorite.  


5 cooked chicken breasts 
We prefer to grill them after marinating in a lemon/oil/lemon-pepper/garlic marinade.  You can prepare your chicken any way you prefer.  Don’t overcook!  Slice into chunks & set aside.

3 boxes chicken broth

2 cups chopped mushrooms

2 cups chopped celery

1 cup chopped yellow pepper

1 cup chopped red pepper

1 cup chopped green pepper

1 cup water (optional)

1 cup chopped green onions

1/4 cup chopped parsely

1 tsp dried or fresh thyme

1 tsp crushed black pepper

5 cloves minced garlic

Salt, to taste

Place everything in a large pan on the stove.  Let simmer 1 hour. 

Add 20 tortellini (or more, if desired).  Simmer 10 minutes.

Add chicken chunks & cream.  Be sure to add the chicken AFTER all ingredients have been cooked.   This will keep the chicken from getting tough.  Add extra water if you prefer.  Enjoy!
